Ingredients
- 2 cups halved multi-colored cherry tomatoes
- 1/8 teaspoon kosher salt
- 1 cup sliced fresh peaches
- 1 1/2 tablespoons olive oil
- 1 tablespoon fresh mint leaves
- 2 teaspoons apple cider vinegar
- 1/8 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 ounce crumbled goat cheese
Instructions
- Combine tomatoes and 1/8 tsp salt in a bowl.
- Let stand for 5 minutes.
