Need to bring an appetizer to your next get-together? Looking for a heart-healthy dip, in place of the usual cream cheese or cheese-laden suspects? Look no further. This heart-healthy pomegranate guacamole is the perfect fit!
First, swap the saturated fats from the typical cream or cheese dips for unsaturated, still creamy, heart-healthy avocados. Unsaturated fats improve blood pressure and cholesterol levels while reducing inflammation and stabilizing heart arrhythmia.
Next, grab a pomegranate. They’re antioxidant powerhouses and their seeds are little hydrating gems full of potassium, Vitamin C and folate to name just a few. These fruits are usually in season late fall into winter, making this a great option for this time of year. Despite their notoriously bad reputation for how hard it is to harvest their seeds, they’re easy to cut up, and the average-sized pomegranate yields about a cup of seeds. Learn how here!
This twist on guacamole is sure to liven up your taste buds. So grab some plantain chips (corn chips will do too) and enjoy!
Ingredients:
3 avocados, ripe
1/2 red onion, diced
2 garlic cloves, minced
1/4 c fresh cilantro, chopped
1 jalapeño, seeds removed, diced
1 lime, juiced
1/2 tsp salt
3/4 c pomegranate seeds
Directions:
- Add all ingredients except the pomegranate seeds to a mixing bowl. Use a fork to mash the ingredients together, until well combined.
- Add 1/2 cup of the pomegranate seeds and stir together.
- Transfer into a serving bowl. Top with the remaining 1/4 cup of pomegranate seeds and an extra sprinkle of cilantro, for that red and green pop of color.
